I can't tell you how many times I've been called "Supermom", or asked "how on earth do you do it all?"<br />

My response? I don't.<br />

Being a mom is such a competitive sport. We compare ourselves to our friends to see if we are "as good" as everyone else. But being a mom is also complicated. We all have our strengths and we all have our weaknesses. But you have to admit, we often tout our accomplishments, but how often do we publicize our weaknesses?<br />
<br />
When you think a mom is just so darn perfect, often times, she's not!<br />
<br />
I'll admit, I'm great with money, and I'm pretty killer in the kitchen. But I HATE to clean. And with 3 kids in the house, it is a rarity that the living room is clean 10 minutes after I've picked up. My kitchen? Never fully clean for very long.<br />
I have a pile of paperwork stashed in the dining room that gets shoved into a box in the basement whenever we have company. And we live out of a clean clothes hamper for a week until either my husband or I get entirely too sick of it and have a mass folding session while watching Battlestar Galactica when the kids have gone to bed. Only to start THAT never-ending cycle all over again.<br />
<br />
I even admitted to a mom yesterday that my kids don't get bathed as much as I'd like - and she didn't look at me like an alien! Now THAT was refreshing. (I mean, it is winter, how dirty can they get? And do you KNOW what a production getting 3 kids bathed is?) Now, don't get me wrong, my kids aren't disgusting, we are excellent about hand washing, cleaning up before and after meals, and teeth brushing, but full on baths are not a daily occurrence around these parts.<br />
<br />
We all just have different priorities.I homeschool, focus on kitchen skills and enjoy crafts. We've cut down on extra-curriculars to the things we enjoy the most. With all the things I DO, do, I don't have time to be a Soccer coach, keep an immaculate house, take my kids to every lesson on the planet, or volunteer at any of the number of things I probably could. I have my priorities and everything else is just noise.<br />
<br />
And you know what? That's just fine with me. My time with my kids is all I need. :)<br />

I'm working on cleaning out our freezer in preparation for recieving our 1/2 beeve at the end of March.<br />
In a few days I'll hopefully be posting about my kitchen adventures from last week. I did a lot of sourdough baking - some really successful, and some not so. It was an interesting week to say the least!<br />

The Fermented French Fries and ketchup comes from a free mini-lesson from <a href="http://www.nourishedkitchen.com/">Nourished Kitchen</a>. I thought it'd be interested to test out -- we'll see how THAT goes!<br />

Tuesday?Ok, so I'm a slacker. I had a wicked cold this weekend and I'm still trying to sleep myself better. It'd be easier if I wasn't up nursing in the night!<br />

Monday: Sausage and Spinach Pizza on <a href="http://gnowfglins.com/2010/06/10/sourdough-pizza-crust/">Sourdough crust</a><br />
This was a huge hit. I made a double batch of sourdough pizza crust over the weekend during the periods when I was feeling ok. Half got thrown in the freezer and half in the fridge for last night.<br />
I rolled and pre-baked the crust for 7 minutes, then topped with some pizza sauce. Then I put a layer of baby spinach and topped that with mozz cheese and cooked, crumbled sausage. Another 25 minutes in the oven, and it was browned perfectly. It was a great way to sneak in both sourdough and spinach - no complaints from the kids!<br />
<br />
Tuesday: <a href="http://www.mylifetime.com/shows/cook-yourself-thin/recipes/supreme-quesadilla-with-poblano-peppers">Chicken Poblano Quesadillas</a> with <a href="http://gnowfglins.com/2009/10/22/whole-wheat-sourdough-tortillas/">Sourdough Tortillas</a> - I have the dough souring right now, I'll let you know how it turns out!<br />

I had to make a couple of adjustments to my menu plan for this week. I switched some recipes that I had scheduled for later in the month in order to use up some produce that I had on hand (namely, potatoes!)<br />

I did a pretty good job of staying on track last week - I only missed one day due to being sick - but we had plenty of leftovers to get through it!<br />

Thursday: Taco Salad (an adaptation from a menu plan from Cooking During Stolen Moments)<br />
<br />

Saturday: Fettucini Alfredo - I use a recipe from an old weight watchers cookboook (which is surprisingly good). We are going to a dinner at our church, so this will be our contribution.<br />
<br />
I've got a chicken from my farmer defrsoting for the orange chicken. I'll take out the breasts and maybe the thighs, and throw the rest in the crock pot. Once cooked, I'll take whatever meat that is left and use it in the chicken pot pie on Wednesday. I've got some turkey bones from school in the freezer, so I'll add those to the chicken bones and replentish my stock supply, which I'll use for soup or rice one of these weeks.<br />

It did mean that I was wandering around the grocery store with a calculator to make sure I was under budget. (And I was under by $14!)<br />

Putting myself on this budget means I have to be conscientious about what items are important for me to get organic, and which ones are ok to buy conventional.<br />
<br />
Which brings me to my jar of pickles. It wasn't a MUST-have on my list, but I love pickles on my sandwiches. The organic section only had whole dills, and they weren't exactly cheap. So I thought, it's just pickled cucumbers, how bad could the conventional ones be?<br />
<br />
Well, the shelved ones (Vlassic, Wegmans brand) all had YELLOW dye in them. Are they serious? Why do we have to put coloring in PICKLES?!? I just don't get it.<br />
Well, then I saw the refrigerated ones that had floating seasonings, and thought, these MUST be better! (These were the Claussen brand and Wegmans version). Well, no dyes here, but instead? High Fructose Corn Syrup.<br />
<br />
Let's just say I splurged on the organic pickles. Next summer? I'll be pickling my own.<br />
<br />
It's just amazing the stuff you'll find food coloring and HFCS in these days. Unbelievable.<br />

We had a snow storm come through, which was fantastic: It meant school was cancelled, so I could get some work done around here! (Can we say tackling the massive pile of laundry that needed to be folded?) I had been doing pretty well with my menu planning, but I kept thinking it could be easier. So I have now switched to a monthly menu plan! I spent my night off of school planning my next menu, and I'm pretty happy with the results.<br />
<br />
I printed out a calendar for February and began assigning "theme" nights. I figured it would make things a bit easier for me this first time. I then printed/photocopied all of the recipes and placed them into a 3 ring binder in order for easy reference. <br />
<br />
So here's the dinner theme breakdown for February:<br />

As a culinary student, I've learned to try and avoid all "processed" or "prepackaged" foods and cook as much from scratch. I'm also trying to work on our family's "real food" conversion, so I'm trying to focus on more whole foods and "nourishing traditions" types of meal preparations.<br />

In the upcoming weeks/months, I will start posting recipes (they'll be more like "methods") for the dishes I make. I don't cook with a whole ton of measurements, but I'll do my best to relay what I'm doing for you all!<br />

The only days I have specific meals picked out are the nights I'm in school. It's either got to be a crock-pot item or something I can make ahead and just stick in the oven for my husband to pull out at dinnertime. <br />
This week's "school-night" meals are the Crab Mac & Cheese (make ahead and just bake off right before eating), the Shrimp Salad and Beef Stew. <br />

Nearly two weeks with no posting. Ugh, I'm frustrated with myself. <br />
So what's been up in the A-team household these 2 weeks?<br />
<br />
I have successfully stayed on point with my bible reading. This in and of itself is a massive feat for me. I was sure I'd be the one in my group who would fall behind quick. Now if I can keep it up for the rest of the time (I think we have 77 days left?) I'll be golden. Although, in my defense, Leviticus, Numbers and Deuteronomy are NOT easy reads. We'll see how the rest of it goes!<br />
<br />
I finally decided on what I was going to purchase with some amazon gift cards I got from Swagbucks, and settled on an extrusion pasta maker. I experimented with it yesterday and made Shrimp in a white wine sauce with some homemade capellini pasta. It was fantastic! I did start out with all AP flour to learn the machine, but I plan on trying some whole wheat and spinach pastas soon. <br />
<br />
To keep me accountable, I'm going to start participating in a few blog carnivals, starting with menu planning. Hopefully it will get me posting more often, and staying on top of my goals for the year!<br />

No more! It is one of my goals for this year to be consistent with my blogging - we'll see how it goes!<br />

I've set a few goals in my life for this year - and wonderfully had a few great Christmas gifts to get me on my way!<br />
<br />
Goal 1: (As stated above) - Blog consistently! I'm hoping to get at least 2 posts a week. More if possible, but hey, let's work baby steps here.<br />
<br />
Goal 2: In my brewing life, we'll be making the big switch to All-Grain brewing thanks to my mom and her hubby's generous Christmas gift! Yay! Just one more step along the way to our eventual brewpub!<br />
<br />
Goal 3: Work diligently on my Baby Steps in Dave Ramsey's program. We've got the debt snowball rolling, and although I will not get specific about our finances on this blog, I have 2 debts I want to have paid off by the end of the year.<br />
<br />
Goal 4: Actually get through the bible! I'm signed up on momstoolbox.com to complete the Bible in 90 days program starting tomorrow. Although I do not intend for this to be a religiously based blog, I think that blogging about it during the first 3 months during the year will help to keep me accountable. Again, we'll see how it goes!<br />
<br />
Goal 5: I want to have some sort of de-cluttering goal for myself. I've come to the conclusion (as has my husband) that we have entirely too much STUFF. Now, with Aleyna growing, we can slowly start to get rid of all of our baby stuff (YAY!) since she will be our last little one. <br />
I have heard of people doing a 730 item challenge - getting rid of 2 items a day for a whole year. Yes, I'm a bit behind already, but it seems like an attainable goal.<br />
<br />
Goal 6: Focus on my Real-Food conversion. This will be the main focus of my blog over the next year. I will be sharing recipes, techniques, and other relevant items I find. We'll see how far I can go with the family and what they will put up with in the next year!<br />
<br />
Anyway, those are my main goals for the year. I'm hoping to keep up on them, and participate in blog carnivals and things of that nature to keep me motivated and accountable. In the meantime, I hope everyone has had a great holiday season and Happy New Year!!<br />

Doing it on a budget? Not so easy.<br />
<br />
Now, we are definitely carnivores in this family. If I told my husband we were going vegetarian, he might seriously consider leaving! (I kid, of course). But he'd seriously be unhappy about it!<br />
My issue is that grass-fed beef is EXPENSIVE. The cheapest ground beef in our area is $4.99 a pound. Compared to mass produced beef that we can get for around $1.89 a pound, it's a HUGE difference.<br />
<br />
My solution? Bulk Beef. <br />
<br />
Living in Virginia, we have many local farms all over the state. A little research shows that there are a ton of them that offer "bulk beef". Basically, you buy a portion of a cow - a quarter, a half, or the whole thing! It can be quite confusing, especially if you (like me) are unfamiliar with butchering cuts and other things of that nature. <br />
We have a local farm that offers packages that already have the cuts picked out for you (perfect for newbies like me!) and for around $5-6 a pound, depending on the package! Now, it's still a lot more expensive than standard ground beef (and equal to the grocery store grass-fed organic), but the $5 a pound gives you approximately the following meat:<br />
Ground beef, T-bones, Porterhouse, Top Sirloin, Rib Steak, Top Round, Ground Beef, and Sirloin Tips, just to name a few! <br />
The $6/lb package gives you:<br />
Filet Mignon, Sirloin, Delmonico, New York Strip, Top Round, Ground, Eye of Round, Sirloin Tip, Bottom Roast, Chuck Roast, and 20-30 lbs of ground beef.<br />
I find it hard to find good cuts of beef (even grain fed-mass produced beef) for around $5 a pound. And when was the last time you saw a Delmonico for $6/lb? (Especially not in the DC area!) <br />
<br />
So I will be doing research on recipes, as I've never cooked many of these beef cuts before... but it should be an interesting experiment! <br />
<br />
I'll be picking up our beef in early June, when I will document exactly what we get for our quarter of beef, and hopefully the recipes I use to cook it! <br />

We recently (this week) made the switch to cloth diapers. I am in LOVE with my diapers. They are so cute and soft, and not nearly as hard to take care of as I would have thought. My grandmother tells stories of cloth diapering her kids back before she had a washing machine - It's amazing just how far we've come!<br />

My husband, on the other hand, is very much put off by the 'eew' factor that cloth diapering has. But I've found 2 things. 1 - changing a cloth diaper isn't really all that more gross than changing a disposable. And if you've ever potty trained a kid - it's LESS gross than that!<br />
2 - to get him on the bandwagon I've bribed him, just a bit. By setting aside the money we WOULD have spent on disposables, we'll be able to take a pretty sweet vacation at the end! I think that was the main selling point for him. That, and me offering to do the diaper laundry. :)<br />

I'm still not convinced that I have enough to say to warrant a blog, but we'll see. <br />

For now, I'll just give a little background about myself. <br />
I'm recently a stay-at-home mom of 2 girls, and currently pregnant with daughter #3. I am a full time student at a local university which allows me to stay home with my girls.<br />
As a result of my culinary school training, I'm starting to work towards eating more organic and naturally grown foods. I'm also a follower of Dave Ramsey, so we are trying to whittle down all of our debt at the same time, so eating healthier has to come on a budget! <br />
<br />
I'm hoping to be able to share deals I can find and show my process for making purchases, and hopefully get my items for much less! (A good example is my current need for a larger vehicle - I'm hoping to be able to pull that one off relatively inexpensively!)<br />
Perhaps I'll even throw in cooking tips every now and again when I learn something interesting. I'll also warn you ahead of time - I'm not the best photographer, so you'll have to bear with me when I post pictures!<br />

As time permits, hopefully I'll be able to post a few times a week - we'll see how much I really do have to say!<br />
